Alioli Sauce

The shopping list:

   _   Yolk. 1 unit
   _   Garlic
   _   Lemon juice
   _   Olive oil
   _   Salt
   _   Pepper

Instructions:

1.- In a blender running, add the yolk, four cloves, lemon juice, and finally the olive oil as a thread until the mix get a think consistency.
2. Add salt and pepper.

Hollandaise Sauce

The shopping list:

   _   Yolks. 5 units
   _   Lemon juice
   _   Cayenne
   _   Salt
   _   Butter. 1/2 cup

Instructions:

1.- In a blender running, add the yolk,  lemon juice, cayenne and finally the melted butter as a thread until the mix get a think consistency.
2. Add salt and pepper.

Genovese Pesto

   _   Basil 0.25 lb
   _   Parmesan Cheese. 1/4 cup. Shredded
   _   Garlic. 2 cloves
   _   Pine nuts. 1/4 cups.
   _   Olive oil
   _   Salt

Instructions:

1. In a processor put basil, cheese, garlic and pine nut. Processor until basil is chopped.
2. With the processor running, add the oil s a thread until getting a smooth consistency.

Pomodoro Sauce

The shopping list:

   _   Olive Oil
   _   Garlic. 4 cloves
   _   Onion. 1 unit
   _   Tomato. 3 lb.
   _   Thyme
   _   Laurel
   _   Salt
   _   Sugar

Instructions:

1. Saute onion and garlic in olive oil. Do not let it brun
2. Add tomato, laurel, and thyme and reduce heat. Let it reduce for 20 minutes
3. Add salt and sugar to correct acidity.

Mortar Made Sauce

If you want you can add more peppers... just taste the sauce before add them!

The shopping list:

   _   Tomato. 1lb.
   _   Onion  1/4 unit
   _   Arbol Pepper 1 unit
   _   Serrano Pepper 1 unit
   _   Garlic   1 clove
   _   Cilantro
   _   Salt

Instructions:

1. Toast in a pan (a little oil if desired) tomato, onion, and peppers, untl have a softer consistency. Do not let them burn.
2. In a mortar, smash all the mix adding garlic and cilantro. Until get a smooth paste.
3. Add salt.

   _   Radish 1 unit
   _   Onion 1/4 unit 
   _   Serrano pepper 1 unit

Instructions:

1. Chop tomato, radish, onion, pepper, and cilantro.
2. Mix all ingredients in a bowl.
