Tabbouleh


This recipe requires pre-work.

The shopping list:

   _   Wheat grains. 0.25 lb.
   _    Tomato. 4 units.
   _    Onion. 1 unit.
   _    Parsley
   _    Mint
   _    Lettuce
   _    Olive oil
   _    Lemon juice or lemons

Instructions:

1. Soak the wheat overnight
2. Cut vegetables as indicated in the diagram
3. Drain the wheat and mix with the other ingredients.
4. Pepper and salt if needed.




Oat Milk

The shopping list

   _   Oat groats
   _   Vanilla

Instructions:

1. Blend 1 cup of oat groats and 2 cups of water.
2. Using a closed fabric, squeze until get all the liquid.
3. Add a 1Tbs of vanilla and mix well, if desired you can add agave syrup.

Alioli Sauce

   _   Yolk. 1 unit
   _   Garlic
   _   Lemon juice
   _   Olive oil
   _   Salt
   _   Pepper

Instructions:

1.- In a blender running, add the yolk, four cloves, lemon juice, and finally the olive oil as a thread until the mix get a think consistency.
2. Add salt and pepper.

Hollandaise Sauce

The shopping list:

   _   Yolks. 5 units
   _   Lemon juice
   _   Cayenne
   _   Salt
   _   Butter. 1/2 cup

Instructions:

1.- In a blender running, add the yolk,  lemon juice, cayenne and finally the melted butter as a thread until the mix get a think consistency.
2. Add salt and pepper.

Mortar Made Sauce

If you want you can add more peppers... just taste the sauce before add them!

The shopping list:

   _   Tomato. 1lb.
   _   Onion  1/4 unit
   _   Arbol Pepper 1 unit
   _   Serrano Pepper 1 unit
   _   Garlic   1 clove
   _   Cilantro
   _   Salt

Instructions:

1. Toast in a pan (a little oil if desired) tomato, onion, and peppers, untl have a softer consistency. Do not let them burn.
2. In a mortar, smash all the mix adding garlic and cilantro. Until get a smooth paste.
3. Add salt.

Eggplant and Fish Pasta

The shopping list:

   _   Olive oil
   _   Garlic. 3 cloves
   _   Eggplant. 0.33 lb
   _   Fish filet 0.33 lb
   _   Tomato 0.5 lb
   _   White wine
   _   Short pasta
   _   Salt
   _   Pepper

Instructions:

1. In a pan heat olive oil.
2. Saute garlic be careful to not burn it, add eggplant until getting a golden color. 
3. Add fish filet, let it cook for a couple of minutes.
4. Add tomato, cooking until softened just a little.
5. Add white wine and leave it until reduced.
6. Add pasta, incorporate it to the rest of ingredients, add salt and pepper.

Apple Compote

   _   Sugar
   _   Apples. 2 lb
   _   Cinnamon
   _   Clove
   _   Pectin

Instructions:

1. In a pot, put 1 liter of water and 1.4 lb of sugar on medium heat. Let until sugar dissolves forming a light syrup.
2. Using a food processor, form a chunky puree using the apples.
3. Add the puree to the syrup, add spices and pectine, moving on the heat until obtaining a nice texture.

Fettucine Alfredo

   _   Butter
   _   Heavy cream
   _   Parmesan Cheese
   _   Fettuccine Noodles
   _   Parsley
   _   Salt
   _   Pepper

Instructions:

1. In a pan, melt the butter, add the cream, heat until the mix is warm.
2. Add cheese, and heat until the cheese melt.
3. Add cooked fettuccini, parsley, salt, and pepper.
4. Move until all the pasta was incorporated.
